Food Poisoning: Common Symptoms and Illnesses

While almost everyone experiences some type of food poisoning in their lives, most don’t realize how serious these types of illnesses can be. Contaminated food can cause life-threatening — even fatal — sickness if consumed. Older adults, pregnant women, young children, and people with chronic diseases are especially at risk for life-threatening conditions should they contract some type of foodborne illness.

According to data from the Mayo Clinic, “Infectious organisms — including bacteria, viruses, and parasites — or their toxins are the most common causes of food poisoning.” Food can become contaminated at any point during production, processing, or preparation. While the majority of food poisoning cases are mild and resolve on their own, this is not always the case. For some people, food poisoning can be so devastating that a trip to the hospital is needed.

Symptoms typically occur within hours of consuming contaminated food. There are more serious symptoms that indicate the need to seek immediate medical attention. These include:

  • Frequent vomiting
  • Bloody diarrhea, urine, or vomit
  • Diarrhea for an extended period of time
  • A fever higher than 101.5 F
  • Blurry vision, muscle weakness, and a tingling sensation in the arms

Here are some of the most common, potentially life-threatening types of food poisoning:

  • Bacteria – E. Coli, Listeria, Salmonella, Campylobacter, and Botulism
  • Parasite – Giardia, Toxoplasma, Amoeba, Trichinella, Taenia Solium
  • Viruses – Norovirus, Sapovirus, Rotavirus, Hepatitis A

Fortunately, most types of foodborne illnesses are preventable by taking the proper precautions in food preparation and consumption. Always ensure that meat, eggs, and dairy are unspoiled and properly prepared. This precaution should be taken with raw fish and shellfish as well. Prevent cross-contamination by ensuring that the juices from raw meats and fish do not come into contact with other food you plan to serve. Above all, make sure that frequent hand-washing is a part of food preparation.
